This week’s recipe I found in the “Wisconsin Energy Cooperative News” December 2021 issue. In the magazine the recipe is courtesy of Erika Kurasz of Neillsville. I’m not sure but this recipe sounds really similar to a recipe a good friend of mine makes.

Cream Wafers

Cookie Dough:

1 cup butter

1/3 cup heavy whipping cream

2 cups all-purpose flour

3/4 cup sugar


1/4 cup softened butter

3/4 cup sifted powdered sugar

1 teaspoon vanilla

Food coloring (optional)

Mix butter, cream, and flour from dough ingredients. Chill dough for 1 hour. On a floured surface, roll dough flat until approximately 1/8-inch thick. Cut cookie shapes using a 1-1/2-inch round cookie cutter. Transfer to waxed paper or a flat-bottomed bowl heavily covered with sugar. Turn to coat both sides of cookie with sugar. Place cookies on an ungreased cookie sheet and prick with a fork 3-4 times. Bake at 375 degrees for 7-9 minutes. Cool. Mix filling ingredients until well blended, adding a drop of food coloring of choice, if desired. Spread filling on bottom side of one cookie and place second cookie on top, bottom side facing the filling.
