I found this great recipe in the Feb./March 2020 “Taste of Home” magazine.

Pork Spanish Rice

1 medium green pepper, chopped

1 small onion, chopped

2 tablespoon butter

1 can (14 1/2 oz) diced tomatoes, drained

1 cup chicken broth

1/2 teaspoon salt

1/4 teaspoon pepper

1-3/4 cups cubed cooked pork

1 cup uncooked instant rice

Optional: Lime wedge and minced cilantro
