Tapioca Fruit Salad
3 (15-20 oz) cans fruit (peaches, pineapple, mandarin oranges, fruit cocktail, large chunk)
1 (3 1/4 oz) package tapioca pudding mix
1/2 small container Cool Whip
Drain fruit. Measure 1 1/2 cups juice (add water if needed) and stir pudding mix into juice in a saucepan. Bring to a boil until thickens. Cool. Cool fruit also. When both are cool, fold fruit into pudding mixture. Fold in Cool Whip and put into a serving bowl. Garnish with maraschino cherries if you like. Best if made several hours ahead or even overnight.
