The peppers in my garden are ready to go and my daughter and I came up with this great new recipe. Delicious, hope you enjoy it as much as we did!

Taco Pepper Poppers

1-1/2 pounds hamburger

6 large green peppers

1 package taco seasoning

1 package Spanish Rice

1 medium onion, chopped

Salsa

Shredded cheddar cheese

Crushed tortilla chips

Prepare peppers by washing and coring them. Brown hamburger with half the medium chopped onion. When hamburger is browned add taco seasoning according to package directions. At the same time prepare the Spanish rice according to package directions. When rice and hamburger are both done, combine beef and rice together. Assemble peppers by layering the following inside of the cored peppers: shredded cheese, onion, meat and rice, salsa, shredded cheese, meat and rice. If there is additional meat and rice, put in a greased baking pan, around the stuffed peppers. Spread onions and salsa over additional meat and rice. Sprinkle crushed tortilla chips over additional meat and rice and on the tops of the peppers. Repeat with shredded cheese. Bake at 350 degrees for 15-20 minutes. Optional: Pour Queso Blanco (white cheese) over peppers and additional meat and rice before sprinkling on cheese and crushed chips.
